2 l unfiltered apple juice
200 g brown cane sugar
200 g white cane sugar
2 sticks of cinnamon (scrape out the pod)
2 sticks star anise
1 fl oz Jamaican rum (e.g. Myers's Rum or Appleton 12y.)
Put apple juice, cane sugar, cinnamon and star anise into a saucepan and simmer gently for 10 minutes.
After boiling, leave to cool for about 10 minutes.
Then pass the mixture through a sieve. Finally, add the rum and the baked apple liqueur is ready!
