Our chef Corey Mulsow and his secret recipe will make the hearts of all pumpkin lovers beat faster. Hokkaido, onions, garlic and cream blend here to create a wonderfully creamy soup. What could be better than a cold, foggy autumn day that ends with an aromatic fragrant pumpkin soup?

600 g Hokkaido pumpkin
100 g onions
2 cloves garlic
50 g butter
150 ml cider
700 ml vegetable stock
150 ml whipping cream
2 pinches sugar/salt/pepper
Decoration:
Pumpkin seed oil
Roasted pumpkin seeds
Preparation:
Wash the pumpkin well, then cut in half and remove the seeds. Quarter the pumpkin halves and cut into thin slices. Finely chop the onions and garlic and sauté in the butter over medium heat for two minutes. Add the chopped pumpkin and sauté for another 2 minutes, season with salt, pepper and sugar.
Then deglaze the soup with cider and reduce by half. Pour in the stock and simmer over a gentle heat until the pumpkin is soft. Add the cream, purée and then bring to the boil. Now season everything again with salt and pepper.
Serve in a plate and decorate with oil and seeds.
